This wine is a blend of Corvina, Rondinella and Molinara. An intense ruby red, and in the olfactory profile, dominated by notes of plum, raisins, vanilla and chocolate. The palate is equally rich, with soft tannins and low acidity that make it incredibly velvety.

Very complex with floral notes, dried fruits, fresh nuts, hazelnuts, candied figs, dried cherries. This Harvest perfectly displays Quevedo's style. It expresses a very youthful profile of dried red fruits, with a touch of mocha and cinnamon. It's sweet and round, with a long finish and traces of a tannic bite.

Although many wines may pair well, we recommend going with a light red wine, like pinot noir. Perfect Pair: An off-dry Rosé. Salty and sweet are the main components of the dish so the wine should not interfere to keep the pairing fresh. Salt loves a bit of sweetness so if you go with an off-dry Rosé the wine should sing!

Perfect Pair: A high-acid Italian white! Pinot Grigio would be nice with its subtle, light-body profile. The refreshing acidity will balance the richness of the crème fraîche, while its understated flavours ensure the wine doesn't compete with the smoky salmon or the punchy flavours of the capers and red onions.

Perfect Pair: The crisp acidity of a sauvignon blanc will beautifully balance the richness of the fried pastry, and the wine’s herbal notes complement the flavours of the spiced vegetables and fresh herbs in the filling.

Perfect Pair: The key to success here is matching the intensity of the dish without tannins getting in the way. A low tannin red, like pinot noir, would be perfect. Soft, loads of fruit, and enough flavour to not be overwhelmed by the glaze.
Ponzu Sauce | Green Onion | Radish
Perfect Pair: A crisp, unoaked Chardonnay is a great match for gyoza, as its acidity and citrus notes complement the savory filling. The wine's bright acidity and fruity character balance the tangy, salty ponzu sauce while the green onion and radish highlight the wine's subtle sharpness.
