    Aged white wine with floral, fruity and pastry aromas. The palate is complex, with hints of citrus and spice. Unctuous and well balanced. Persistent finish with saline touches. Very elegant and subtle.

  • Cabernet Sauvignon - Double Diamond Winery | USA BOOTH #308

    The nose holds notes of black raspberry, toasted cedar, juicy plum, and pennyroyal mint. The palate is mouthwatering with layers of blackberry compote, dark chocolate shavings, oolong tea, and flint. The dynamic flavors carry across the mid-palate in vivid harmony into a long, floral finish.

    This wine is fragrant with mixed berry compote, crushed ivy, iron, and vanilla bean. Full in body and generously concentrated with notes of ripe black fruits, spice, dark chocolate, and espresso framed with silky tannins, food-friendly acidity, and a lingering finish.

    An authentic Chilean red blend with aromas of lavender, blackcurrants, and plums. Fresh fruit appears on the palate followed by subtle notes of spices. It is very pure, intense, deliciously refined, and accompanied by perfectly ripe tannins.

  • Estate Pinot Noir Sonoma 21 - Naidu Winery | USA BOOTH #300

    On the palate the flavors follow with cranberry, raspberry and dried herbs. The bright acidity holds the wine together and leads to a long smooth finish. This is a wine that really dances with grace between old and new world Pinot Noir.

  • Frans K. Smit Red - Spier Wine Farms | SOUTH AFRICA BOOTH #101

    Blackcurrant and dark fruits are present on the palate, with the barest traces of cigar box. You can almost taste the tannins in this blend. They are firm and assertive, but also rounded, sweet, soft and very amiable. Very elegant and subtle.

    A characteristic ruby red with intense red fruit notes typical of Sangiovese - black cherry and raspberry, as well as flowers and spices. It is wonderfully full-bodied, but has soft tannins, very refined, which enhance the pleasantness of each sip.

  • Montezovo Amarone Valpolicella DOCG - Cottini Vini | ITALY BOOTH #702

    This wine is a blend of Corvina, Rondinella and Molinara. An intense ruby red, and in the olfactory profile, dominated by notes of plum, raisins, vanilla and chocolate. The palate is equally rich, with soft tannins and low acidity that make it incredibly velvety.

  • Colheita 2007 Tawny Port - Quevedo | PORTUGAL BOOTH #210

    Very complex with floral notes, dried fruits, fresh nuts, hazelnuts, candied figs, dried cherries. This Harvest perfectly displays Quevedo's style. It expresses a very youthful profile of dried red fruits, with a touch of mocha and cinnamon. It's sweet and round, with a long finish and traces of a tannic bite.

  • Carneros Chardonnay - Rombauer Winery | USA BOOTH #106

    Intense aromas of nectarine and peach mingle with high notes of lime, grapefruit, and honeysuckle on the nose. These continue to the palate where they meet candied ginger and rich chamomile flavors. The creamy, full mouthfeel is lifted by a stunning acidity.

  • Zinfandel - Rombauer Winery | USA BOOTH #106

    Boysenberry and bold black plum notes jump out of the glass, underscored by clove and vanilla. Light red pepper and dried orange peel notes complement the fruit profiles while fine tannins and a pleasing acidity are found in each sip which ends with a lingering finish.

    Garnet red colour with orange hues. Black-currant, root, leather, coffee beans. Nicely warm, full bodied, well balanced, soft tannins, with long finishing and great aftertaste.

    This Chablis shows remarkable purity, and a delightful balance between acidity and roundness With floral and shellfish notes, the crisp profile offers freshness with fine, persistent bitterness.

    Delicate plum notes, black berry confit, a hint of tobacco, floral touch, and nougat. Juicy, elegant, velvety tannins, noble wood spice, hints of blackberries on the finish, some vanilla and toasty aromas in the aftertaste that lingers well, secure aging potential.

Winefest EDMONTON 2025 Menu

This menu is curated by Winefest and the world-class culinary team at the Edmonton Convention Centre, including Senior Sous Chef Lalit Upadhyaya, Executive Sous Chef Guadalupe Muñoz de Ratcliffe, Executive Pastry Chef Jason Wang, and 11 Red Seal chefs. The team is led by multi-award winning Executive Chef Serge Belair. This year, our featured dish is a creation from Chef Serge’s personal collection, with a story of inspiration and family.

    Hand Sliced BBQ Beef Brisket | Grainy Mustard Cabbage Slaw | Corn bread | BBQ Sauce | Pickle

    Perfect Pair: With so many flavours in BBQ sauce and the vinegar component, BBQ is something wine shouldn't interfere with. So, opt for fruity, not too much oak, and not too high in alcohol. This means the wine will complement and not compete.

    Flambéed Wild Caught Prawns | Spanish Paprika | Sambuca | Tomato Confit | Masa Mashed Potatoes | Green Pea Gremolata

    Perfect Pair: Think regional and go to a white wine that comes from close proximity to the ocean. Clean, crisp, slightly herbaceous, and with a touch of salinity to pair with the green flavours.

    Perfect Pair: Charcuterie is a popular pairing with wine because the variety of flavours complement so many different wines. Although many wines may pair well, we recommend going with a light red wine, like pinot noir. It’s a low tannin, fruit-forward wine, which makes it versatile for various meats, pickled goods, and cheeses.

  • CINNAMON BUN SMORES V

    Warm Cinnamon Bun | Chocolate Sauce | Meringue | Graham Crackers

    Perfect Pair: This dessert calls for a fortified wine like a tawny port. The caramel and toasted nut flavours of the port will beautifully complement the warm cinnamon and rich chocolate, creating a cozy and indulgent pairing.

    Vanilla Custard | Madeleine | Lemon Cream | Castor Sugar

    Perfect Pair: An off-dry Riesling. The wines citrus and stone fruit notes will beautifully complement the lemon cream, while the bright acidity balances the richness of the custard. And the wine's delicate sweetness enhances the dessert's flavours.

    Perfect Pair: A sweeter Rosé sparkling with more acidity to cut through the richness of the Cheesecake.

    Fromage Frais Herb Cheese | Dried Fig Phyllo Cup

    Perfect Pair: Bubbles will keep the freshness alive and counter the sweetness of the Fig. Pairing sparkling with fresh cheese - or cheese in general - keeps the palate from getting weighed down due to the fat content.

  • MINTED CANTALOUPE SKEWER GA + DF

    Mint | Cantaloupe | Serrano Ham

    Perfect Pair: An off-dry Rosé. Salty and sweet are the main components of the dish so the wine should not interfere to keep the pairing fresh. Salt loves a bit of sweetness so if you go with an off-dry Rosé the wine should sing!

  • SMOKED SALMON BLINI

    Smoke Salmon | Crème Fraiche| Capers | Red Onion | Herbs

    Perfect Pair: A high-acid Italian white! Pinot Grigio would be nice with its subtle, light-body profile. The refreshing acidity will balance the richness of the crème fraîche, while its understated flavours ensure the wine doesn't compete with the smoky salmon or the punchy flavours of the capers and red onions.

  • VEGETARIAN SAMOSA V

    Vegetarian Samosa | Mint Chutney

    Perfect Pair: The crisp acidity of a sauvignon blanc will beautifully balance the richness of the fried pastry, and the wine’s herbal notes complement the flavours of the spiced vegetables and fresh herbs in the filling.

  • YAKITORI CHICKEN GA + DF

    Teriyaki Glaze | Sesame | Red Cabbage

    Perfect Pair: The key to success here is matching the intensity of the dish without tannins getting in the way. A low tannin red, like pinot noir, would be perfect. Soft, loads of fruit, and enough flavour to not be overwhelmed by the glaze.

  • HOUSE-MADE GYOZA V + DF

    Ponzu Sauce | Green Onion | Radish

    Perfect Pair: A crisp, unoaked Chardonnay is a great match for gyoza, as its acidity and citrus notes complement the savory filling. The wine's bright acidity and fruity character balance the tangy, salty ponzu sauce while the green onion and radish highlight the wine's subtle sharpness.

  • Menu and listings are subject to change. 
  • Winefest is an 18+ event. No minors are permitted. Government-issued photo ID for ALL attendees is mandatory for entry.
  • Tickets to Winefest are all-inclusive; a ticket grants you admission into the Grand Tasting Hall, samples of wine, bite-sized food samples, and a take-home wine glass.
  • Winefest tickets can only be used for the date and session they were purchased for.
  • Tickets are non-refundable and non-exchangeable.
  • Dunollie Castle Productions Inc. (Winefest/Rocky Mountain Wine & Food Festival) sells all online tickets through a secure supplier. We strongly recommend that you purchase your online tickets directly from our supplier ONLY and that you do not purchase tickets from third-party ticket sellers. We reserve the right to refuse entry to any and all online ticket holder(s) who cannot (upon request) provide proof of payment by producing the credit card the ticket(s) were purchased with, as well as the address, phone number, and email address that the ticket(s) were booked under. Consumers who cannot show the necessary proof of purchase may be denied entry into the event and will not receive monetary reimbursement.
  • Dunollie Castle Productions also will not provide entry to duplicate tickets. Once a ticket has been scanned at the entrance, it cannot be scanned again for additional entries.

  • Coat check is available before entering the Grand Tasting Hall. Coat check is managed by the Edmonton Convention Center.
